Mint Jelly

In a large bowl, pour water over mint leaves and let set for 1 hour. Press juice from leaves; measure 5 cups and pour into large saucepan. Add lemon juice, sugar, and pectin; stir well. Bring to a rolling boil. boil hard for 1 minute, stirring constantly. Remove from heat; skim off any foam. Add a few drops of green food coloring.

5 cups boiling water
5 cups firmly packed mint leaves
1/2 cup lemon juice
6 cups sugar
1 - 1¾ oz. pkg. powdered fruit pectin
green food coloring
