Fresh Garden Peas with Browned Butter
Put peas,
onions, salt, sugar, butter, and water in a 1½-quart saucepan. Bring to
a boil. Reduce heat to medium. Boil for approx. 3 minutes until tender.
If using frozen peas, 2 minutes is adequate. Drain and serve in heated
serving dish, topped with Browned Butter.
Browned Butter:
Melt the butter in a large pan over medium-low heat. After it
has melted, stir occasionally until the butter begins to brown. Be sure
to remove from the heat before it burns, or it will lose its flavor. It
should be a rich nut-brown color.

1/2 c. spring onions cut in 1/2" pieces
1 t. salt
1 t. sugar
1 T. butter
1/2 c. water
2 T. Browned Butter
