Buttered Beets
Scrub the
beets and place in a large saucepan with lid. Cover with water and add
salt. Cook over medium heat approx. 30 minutes until tender. Drain and
cool slightly. Remove the peels and cut into thin slices. Put beets in a
1-quart saucepan and add butter. On very low heat simmer for approx. 10
minutes until heated through. Check for seasonings, adding more salt if
desired. Sprinkle with pepper and serve piping hot.
Leftover beets are delicious in vegetable salad.
