Baked Potatoes
Choose a
mealy potato for baking. Some varieties tend to become watery. I prefer
the Idaho, Irish Cobbler, or Mine baking potato. Scrub potatoes
thoroughly and prick the skin twice to keep them from exploding in the
oven. Bake potatoes in a preheated 375° F oven for 1 hour. Serve
with fresh butter, salt, and pepper. Many people enjoy sour cream and
chives with their baked potatoes. Chives should be added to the sour
cream before serving. The baked skin is so crisp and should be eaten
with butter, salt, and pepper. I do not like a baked potato that has
been wrapped in foil because when using foil, the skin gets soft.
