Pronto Potato Soup

Brown bacon till crisp. Remove; add onions to drippings and sauté 2-3 minutes. Drain off fat. In saucepan, mix potatoes and soup till smooth. Add milk gradually, stirring to avoid lumps. Add bacon, onions, and seasonings. Serve with crackers.

8 bacon strips, cut into pieces (or any leftover meat)
1 small onion, chopped
1½ - 2 cups leftover mashed potatoes
1 can cream of chicken soup
1 or 2 soup cans milk
2 Tbsp. chopped parsley
salt and pepper to taste
any leftover vegetable can be added
