Onion Soup

Sauté onions and garlic in butter until golden in color. Cover with the beef bouillon. Bring to a boil and simmer for 20 to 30 minutes. Season with salt and pepper

Dry French bread slices in oven on low heat. Ladle soup into individual soup crocks or into oven proof deep casserole. Float bread on top of soup. Cover with Gruyere cheese and brown in hot (400 degree) oven until bubbly. Makes 4 large servings.

2 large Spanish onions
1 clove garlic, minced
1/4 cup butter
4 cups beef bouillon
4 slices French bread
Gruyere Cheese grated
