Mary's Onion Soup
Sauté the
onions in butter in a heavy skillet for approximately 15 minutes on
medium heat until light brown. Reduce the heat to low and add the beef
stock. Simmer for 15-20 minutes. Check for seasoning, and add more salt
and pepper if needed. When serving, place toast on top of the soup in
the individual bowls. Top with the cheese. If using commercial grated
cheese, place under the broiler for a few seconds to melt and brown the
cheese. Serves

2 c. peeled and thinly sliced onion
2 T. flour
4 c. seasoned beef stock, clarified
thin slices buttered toast
grated Parmesan cheese
sherry (optional) |
