Mother's Mayonnaise

Blend the vinegar, 1 cup of the water, the sugar, salt, pepper, and turmeric in a small heavy saucepan, and bring to a boil. Mix the cornstarch to a paste with the remaining 1/4 cup water and add to the pan, stirring over low heat until thick. Remove from heat and cool. Mix in the mustard and imitation mayonnaise.

Makes 3 cups.

1 cup vinegar
1¼ c. water
2 cups sugar
1/4 t. salt
1/8 t. freshly ground black pepper
1/4 t. turmeric
1/3 c. cornstarch
2 T. prepared mustard
1/2 c. commercial imitation mayonnaise
