Chicken Breasts with Herb Stuffing
Split
chicken breasts, just enough to fold. Combine flour and seasonings in
paper bag. Add chicken and shake. Fill cavity of each chicken breast
with herb stuffing.
Thoroughly combine all except last 2 ingredients. Hold stuffing in
chicken by skewering breasts with toothpicks. Dip chicken into melted
butter. Place in baking dish. Drizzle a little melted butter over each
breast. Bake in a preheated slow oven (325° F.) for 45 minutes. Turn.
Bake an additional 45 minutes until tender. Sprinkle with chopped
parsley. Serve with Mushroom Sauce.
Makes 2½ cups.
