Beef Bologna

Sprinkle salt, Tender Quick, and saltpeter over meat and grind. Let set 3 days. Grind again. Mix in remaining ingredients. Add enough water to mix, then mix in with meat. Also mix in 8 quarts of water. Press in jars and add 1 tsp. Liquid Smoke to each quart on top of meat in jars. Cold pack 2 hours. This is also good with turkey or chicken.

100 lbs. beef, cut up
27 oz. salt - scant
32 oz. Tender Quick
2 tsp. saltpeter
2 oz. black pepper
4 tsp. mace
1 tsp. garlic powder
1-1/2 oz. ground coriander
