Rice Croquettes
Saute onion in
butter until tender; add rice. Saute 3 minutes. Stir in broth and parsley
and bring to a boil. Reduce heat, cover and simmer 40 minutes. Cool and
stir in egg, cheese, basil and pepper. Shape into logs and roll in crumbs
and fry in olive oil. You can also sprinkle crumbs onto hot oil and drop
spoonfuls on top, flattening into patties and sprinkle tops with crumbs
before turning. |
1/2 cup chopped
onion
2 Tbsp. butter
1 cup uncooked brown rice
2¼ cups chicken broth
2 Tbsp. fresh parsley
1 egg
1/2 cup cheese
1 tsp. dried basil
1/4 tsp. pepper
1/2 cup dry bread crumbs or oat bran, wheat bran, cornmeal, etc. |
