Easy Homemade Noodles
Put enough flour in
a Fix & Mix bowl to weigh 4 pounds, including bowl. Beat egg yolks with
salt and water until foamy. Make sure water is boiling hot, then beat
quickly. The longer you beat the yolks and water, the lighter they will be
in color. So, if you want yellow noodles, do not over beat. Now pour this
mixture into flour and stir with a large spoon until stiff. Shape into
balls with hands. Put the lid on and let stand for 10 minutes. The knead a
bit and it's ready to put through noodle cutter. Use rolling pin to roll
out and cut in strips. (This dough is not so sticky to handle.) |
