Creamed Eggs
Place
bread in buttered muffin cups to form patty shells. Bake in 350° F.
oven until golden, Approx. 6 minutes. Meanwhile, brown ham in butter in
heavy sauce pan. Add onion and cook until soft. Stir in flour and
gradually add milk. Cook until thick and smooth. Add sliced eggs and
pour into toast cups or over toast.
Serves 6

1½ c. cooked or baked ham cut in strips or squares; bacon may be used
3 T. butter or margarine
1/3 c. chopped green onion
3 T. flour
3 c. milk
6 eggs, hard boiled, peeled and sliced |
