Recipe Lemon Sponge Pie Amish Recipes

Cream butter; add sugar and egg yolks. Beat until light and fluffy. Stir in flour, salt, lemon juice, lemon rind, and milk. fold in stiffly beaten egg whites. Bake at 400° F. for 10 minutes. Reduce heat to 350° and bake until set.

2 T. butter
1 c. sugar
3 eggs, separated
1/2 c. lemon juice
1/2 t. salt
1¼ c. hot milk
2 T. flour
1/2 t. lemon rind
