Lemon Meringue Pie
Mix first
three ingredients in a saucepan. Cook over medium heat, stirring
constantly until mixture boils. Boil 1 minute. Slowly stir at least half
of the hot mixture into egg yolks. Blend into hot mixture in saucepan.
Boil 1 minute longer. Remove from heat. Continue stirring until smooth.
Add rest of ingredients. Cool. For meringue: Beat egg whites until
stiff, gradually add sugar to taste. After placing on pie. broil to
brown.

1½ cups water
3 egg yolks, slightly beaten
3 tablespoons butter
1/4 cup lemon juice
1 tablespoon grated lemon rind |
