Amish Vanilla Pie

  In a 1 quart saucepan, combine the molasses, sugar, egg and flour and mix well. Gradually add the hot water. Cook over medium heat until thickened, stirring constantly. Remove from heat and add the vanilla. Cool and pour into the unbaked pie shells. To make the crumb topping, mix all the topping ingredients together in a large bowl using a pastry cutter or mix by hand. Combine until the crumbs are fine. Divide in half, using half on each pie. Bake in a preheated 375° F oven for 10 minutes, then reduce heat to 350° and bake 30 minutes longer until the center of the pie is firm.

 
2 unbaked 9" pie shells
Bottom:
1 cup golden table molasses or barrel molasses, not baking molasses
1/2 cup sugar
1 egg, slightly beaten
2 Tbs flour
2 cups hot water
1 teaspoon vanilla extract
Crumb Topping:
1 cup sugar
1/2 cup butter
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
2 cups flour
