Funnel Cakes

  In a large bowl, combine the flour, sugar, baking powder, and salt. Gradually add the egg and milk until well blended. Let stand for 15 minutes. In deep skillet, add oil (about 1/3 inch deep) and heat to 390° F. When oil is hot, pour the batter into a funnel, drizzling a thin stream of batter into the hour oil. One finger placed under the funnel's narrow end should control the flow of the batter, the other hand holding the broad part of the funnel. Be wise by using a mitt to hold the funnel and be careful not to burn the hand controlling the flow. Start in the center of the skillet, circling continuously until pan is filled or the desired size is reached. As soon as the cake turns golden, turn and fry until golden on the other side. Drain on paper towels. Serve hot with powdered sugar or other toppings.
  You may add 1/4 cup tiny chocolate chips to the batter, but it will splatter a bit. Most folks think the effort is worth it.

Yields: 6 large funnel cakes

1 cup flour
2 teaspoons sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg, lightly beaten
3/4  cup milk
oil for frying
confectioners' sugar, honey, maple syrup, or chocolate syrup for topping.
