Applesauce Cake
In a bowl,
cream the sugar and shortening until light and fluffy. Mix in the eggs,
1 at a time. In another bowl, sift the flour with the spices and salt.
Beat into the creamed mixture. Next, beat in the dissolved baking soda.
Fold in the raisins (or nuts and raisins), applesauce, and vanilla. Pour
into 2 greased and floured 9" x 13" cake pans. Bake in a preheated 350° F. oven for
50 minutes.
Serves 10-12

1 c. granulated sugar
1/2 c. vegetable shortening
2 eggs
2 c. all-purpose flour
1 t. powdered cloves
1/2 t. ground nutmeg
1 t. salt
1 t. baking soda dissolved in 2 T. hot water
1 c. raisins or 1/2 cup each raisins and coarsely chopped walnuts
1½ c. canned or homemade applesauce
1 t. vanilla extract
