Maraschino Cherries

Soak cherries overnight in brine. Next day drain and rinse cherries in water. Add water, juice, sugar and color. Heat to boiling point. Let set 24 hrs. Bring to boil 3 times. Add almond extract. Jar and seal.

4½ lb. seeded white cherries
3 c. water
1 oz. almond extract
4½ lb. sugar
juice of 1 lemon
1oz. red coloring
Brine:
2 Tbsp. salt
1 tsp alum
water to cover
