Recipe Ketchup Amish Canning Recipes

Mix all together; cook for 1 hour. Strain; bring to a boil again. Thicken with 4 T. cornstarch moistened with vinegar. Cook for 10 minutes, stirring constantly. Put into jars; seal.

Yields about 8 pints.

4 qt. tomatoes, mashed
1 T. cinnamon
2 T. salt
1/2 t. red pepper
1 med. onion, chopped
2 c. sugar
1 T. pickling spice
1 t. ground mustard
1/2 c. vinegar
