Cucumber Cinnamon Rings

Combine first three ingredients and let stand 24 hours. Drain and wash in clear water. Soak 3 hours in cold water, then drain off. Simmer 2 hours in 1 cup vinegar, 1 Tbsp. alum, 1 bottle red food coloring, and water to cover. Drain off. Pour syrup over rings and let stand overnight. Drain and reheat 3 days. The last day, heat and add 1 pkg. cinnamon red hots. Pack n jars and seal.

2 gal. large cucumber rings, peeled and seeds removed
2 cups lime
8½ quarts water

Syrup:
2 cups vinegar
2 cups water
10 cups sugar
