Recipe Cream of Tomato Soup Amish Canning Recipes

Melt butter, add onions and fry a little, (not brown). Stir in flour, sugar, salt and pepper. Cook until smooth and bubbly, stirring constantly. Remove from heat, add tomatoes. Stir. Cold pack for 15 - 20 minutes.

2 c. butter
1/4 c. finely chopped onion
2¼ c. flour
3/4 c. sugar
1/4 c. salt
2 t. pepper
7½ qt. tomato juice
