Apricot Butter

To prepare pulp cook pitted apricot halves until soft, adding only enough water to prevent sticking. Press through a sieve or food mill, measure pulp. Add sugar, cook until thick, about 30 min. Stir frequently. Add lemon juice. our into jars. Cold pack 5 min.

1½ qts. apricot pulp
3 c. sugar
2 Tbls. lemon juice
