Apple Butter
Heat cider
to boiling in 5 qt. Dutch oven. Boil uncovered until cider measures 2
qt, about 1 & 1/4 hours. Add apples. Heat to boiling. Reduce heat.
Simmer uncovered, stirring frequently until apples are soft... about 1
hour. Stir in remaining ingredients. Reduce heat. Simmer uncovered,
stirring frequently until no liquid separates from pulp... about 2 hrs.
heat to boiling. pour into hot, sterilized jars. put lids on and process
in boiling water bath for 10 minutes.
Makes 3½ pints

3 qt. pared and cut up cooking apples.
(McIntosh, Cortland or Jonathan apples work best)
1 t. cinnamon
2 c. sugar
4 qt. sweet apple cider
1 t. ginger
1/2 t. cloves
