Waffles
In a small
bowl, beat egg yolks until light. Add the milk. In another bowl, sift
together the flour, salt, and baking powder. Gradually add these dry
ingredients to the egg yolks and milk. Add the melted butter. Mix until
smooth. Beat the egg whites until stiff and fold in. Blend thoroughly.
Preheat the waffle iron. It is ready to use when a drop of water
bounces on it. Pour a ladleful of batter onto the iron, starting in
center. Be sure that there is only a thin coating of the batter. It will
rise and spread to the edges as it bakes.
Makes 6 servings

2 c. milk
2 c. unsifted flour
1 t. salt
3½ t. baking powder
4 T. melted butter
