Sunrise Pancakes
Prepare syrup by
combining sugar, corn syrup, and cream in a 1-quart saucepan. Cook,
stirring constantly, over medium heat until sugar is dissolved. Simmer 2
minutes or until syrup thickens slightly. Remove from heat. Stir in
vanilla and nectarine. Makes 1 cup.
For pancakes, combine flour, sugar, baking powder, baking soda and
salt in large bowl. Combine eggs, yogurt, and water in medium bowl. Whisk
in butter. Pour liquid ingredients into dry ingredients; stir until
moistened. Pour about 1/4 cup batter onto a hot griddle for each pancake
and spread batter out to make 5" circles. Makes about 8 pancakes. |
1 cup all-purpose flour
2 Tbsp. sugar
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 eggs, slightly beaten
1/2 cup plain yogurt
1/2 cup water
2 Tbsp. butter or oleo, melted
Vanilla Cream Syrup:
1/2 cup sugar
1/2 cup light corn syrup
1/2 cup whipping cream
1 tsp. vanilla
1 nectarine, diced (optional) |
