| In skillet
sauté potatoes, ham, and onion in oil until potatoes are done. Beat
eggs, salt, and pepper; add to the skillet. Cook, stirring occasionally,
until eggs are set. Remove from heat and stir in cheese. Spoon onto
serving platter. Sprinkle with chives. Serve with juice and toast.
Yields 4 servings.
2 cups hash browns
1 cup chopped fully cooked ham
1/2 cup chopped onions
2 tablespoons cooking oil
salt and pepper to taste
1 cup shredded cheese
minced fresh chives
