Zucchini Muffins

   Preheat oven to 375 F. Oil muffin pans. Stir or sift together dry ingredients. In small bowl, beat eggs, milk, honey and oil. Add to dry ingredients, stirring just enough to moisten. Quickly stir in zucchini and raisins and spoon into greased muffin pans. Bake 20-25 minutes or until golden brown. Makes 12-15 muffins. 2 c. whole wheat flour
1 Tbsp. baking powder
1 tsp. cinnamon
3/4 tsp. salt
2 eggs
3/4 c. milk
1/3 c. oil
1/4 c. honey
1 c. coarsely grated zucchini
2/3 c. raisins
