Zucchini Bread

Mix sugar and eggs. Add cinnamon, salt, and soda, and mix well, then add the flour, zucchini and oil. Fold in nuts and raisins last. Put into a greased and floured baking pan and bake at 325° F. for 1 hour.

3 cups flour
1½ cups sugar
1 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon baking soda
2 cups diced unpeeled zucchini
1 cup nuts
1 cup raisins
3 eggs
1 cup vegetable oil
