Fruit and Nut Muffins
In a large
mixing bowl, combine apples, sugar, raisins, and nuts; set aside. In
another bowl, beat eggs, oil, and vanilla. Stir into apple mixture.
Combine dry ingredients; carefully fold into apple mixture. Do not overmix.
Fill 18 greased muffin cups almost to the top. Bake at 375° F. for 18-20
minutes, or until muffins test done. Yield: 1½ dozen. |
4 cups diced, peeled tart baking apples (1/4" pieces)
1 cup sugar
1½ cups raisins
1½ cups chopped nuts
2 eggs
1/2 cup vegetable oil
2 tsp. vanilla extract
2 cups all-purpose flour
1½ tsp baking soda
2 tsp. ground cinnamon
