Cracked Wheat Bread

   Dissolve yeast in 1/2 c. lukewarm water. Mix cold water and scalded milk. Mix dry ingredients together, mix yeast, milk mixture and shortening, and add this liquid to dry ingredients gradually, mixing in between additions.

Dough should be almost too moist to knead, but can be  kneaded with greased hands. Punch down after letting it rise to double in size. Let rise again, then knead into three loaves. Place in greased loaf pans, and let rise to double. Bake in 400 F. oven for 25 minutes, then reduce temperature to 275 F and bake for 25 minutes more.

2 pkg. dry yeast
1/2 c. lukewarm water
1 c. cracked wheat
9 c. flour
2 c. cold water
2 c. scalded milk
3 Tbsp. sugar
2 Tbsp. salt
4 Tbsp. lard (shortening may be used in place of lard)
