Cinnamon Doughnut Muffins
In a large
bowl, combine flour, baking powder, salt, nutmeg, and cinnamon. Combine
sugar, oil, egg, and milk; stir into dry ingredients until just moistened.
Fill greased or paper-lined muffin cups 1/2 full (10 muffin cups). Place 1
teaspoon jam on top. Cover with enough batter to fill muffin cups 3/4
full. Bake at 350° F. for 20-25 minutes.
For topping: Place melted butter in a bowl; combine sugar
and cinnamon in another bowl. Immediately after removing muffins from the
oven, dip tops in melted butter, then in cinnamon and sugar. |
