Blueberry Muffins Recipe Amish Cooking Baking Recipes

Mix flour, sugar, baking powder and salt. Make a well in the center of the flour mixture. Combine milk, eggs and oil and add flour. Stir until dry ingredients are moistened. Toss in blueberries and 2 tbsp. of sugar. Stir gently into batter and pour into greased pans. Bake at 400° F. for about 25 minutes. While warm, dip tops into melted butter and then sugar Makes 12 muffins.

1¾ c. flour
1/4 c. sugar
2½ tsp. baking powder
3/4 tsp. salt
3/4 c. milk
1 egg, well beaten
1/3 c. cooking oil
1 c. blueberries
2 tbsp. sugar
