Apple or Blueberry Muffins
In a large
mixing bowl sift the flour, baking powder, salt, and sugar. Add the
eggs, milk, and melted butter all at once and stir until well moistened.
Do not overbeat--the batter should be lumpy and rough. Fold in the
apples or blueberries and the cinnamon and pour into buttered muffin
pans. Fill only 2/3 full to allow for baking expansion. Sprinkle
cinnamon sugar on top of each muffin and bake in a preheated 400° F.
over for 20-25 minutes. Serve hot with lots of butter or jam.
Makes 20-24 muffins

2 c. sifted flour
2 t. baking powder
1/2 t. salt
3 T. granulated sugar
2 eggs
3/4 c. cold milk
1/4 c. melted butter
3/4 c. peeled and finely chopped apples or blueberries
1/2 t. cinnamon or nutmeg
3 T. granulated sugar mixed with 1 teaspoon ground cinnamon for topping
butter or jam (optional)
