Cucumber Dip

Peel cucumber, quarter lengthwise and remove seeds. Grate and squeeze to remove excess moisture. In a small bowl combine all ingredients. Cover and refrigerate for at least 24 hours. Serve cold with raw vegetables. Makes 2-1/2 cups.

1 medium cucumber
2 garlic cloves, minced
1 Tbsp. olive oil
1 Tbsp. chopped fresh dill
2 cups plain yogurt
1 small onion, minced
1 Tbsp. white vinegar
