Swiss Broccoli Chowder
| In a
medium saucepan, melt butter. Add green pepper and onion; cook and stir
occasionally until vegetables are crisp-tender, about 6 minutes. Stir in
flour and salt. Cook and stir for 1 minute. Stir in milk, broth, and
broccoli. Cook and stir occasionally until mixture is smooth and
thickened, about 5 minutes. Stir in cheese. Cook and stir until cheese
melts and mixture is hot, about 2 minutes.
1/2 c. chopped green pepper
1/2 c. chopped onion
1½ T. flour
1/4 t. salt
1½ c. milk
1½ c. chicken broth
1 (9 oz.) pkg. chopped broccoli
1 c. shredded Swiss cheese
