Chicken Breasts with Herb Stuffing

  Split chicken breasts, just enough to fold. Combine flour and seasonings in paper bag. Add chicken and shake. Fill cavity of each chicken breast with herb stuffing.
 Thoroughly combine all except last 2 ingredients. Hold stuffing in chicken by skewering breasts with toothpicks. Dip chicken into melted butter. Place in baking dish. Drizzle a little melted butter over each breast. Bake in a preheated slow oven (325 F.) for 45 minutes. Turn. Bake an additional 45 minutes until tender. Sprinkle with chopped parsley. Serve with Mushroom Sauce.
Makes 2 cups.


Serves 4

4 whole boned chicken breasts
1/4 c. flour
1/2 t. salt
1/4 t. paprika
dash pepper
1 Herb Stuffing recipe
1/2 cup melted butter
About 2 Tablespoons chopped fresh parsley
1 recipe Mushroom Sauce
