Breaded Pork Chops
Dip the
chops in the beaten eggs and season with salt and pepper. Mix the bread
and cracker crumbs together. Dip the seasoned chops in the crumbs. Cover
well. Melt the shortening in a heavy skillet. Panfry over medium heat
for approx. 15 minutes on each side until golden brown, or brown in the
oven by placing shortening in the bottom of a pan. Bake in a preheated
375° F. oven for 30 minutes, turning after 15 minutes.

pounds fresh pork chops, cut 3/4" thick
2 eggs, lightly beaten
1 t. salt
1/4 t. pepper
1/2 c. dry bread crumbs
1/4 c. saltine cracker crumbs
shortening for frying
