Betty Groff's Quiche
Pre-bake the pastry crust for 5 minutes
in a preheated 350° F. oven; this prevents it from becoming soggy.
Sprinkle the shredded cheese evenly over the pastry shell. Grill the
bacon or fry it in a heavy skillet until crisp; remove and drain on
paper towels. Crumble the bacon and add to cheese. Use the bacon fat to
sauté the onions, mushrooms, and parsley until golden brown. Add the
flour and salt and stir until well blended. Add to the cheese and bacon.
Beat the eggs lightly in a bowl. Add the cream. Pour over the cheese
mixture. Bake in a 375° F. oven for 45 minutes, or until firm and
golden brown. Serve warm

1 (9") pastry crust
1˝ cups shredded Cheddar or Swiss cheese*
8 slices crisp bacon, crumbled
2 tablespoons chopped parsley
1/4 cup chopped onions (optional)
1 cup sliced mushrooms
1 tablespoon flour
1/2 teaspoon salt
4 eggs
1˝ cups light cream
*Chilled cheese is easier to shred of grate. |
